Why is pork “real barbecue” in the south instead of beef?

Depends on who you ask and in what region. Most people will tell you that pigs were more affordable and the whole hog can be used, even for soap making and other items besides food. Pork can also be cured more easily in the southern climate. Most cattle in East Tennessee are dairy cows and not really used for meat. At home in East Tennessee, we usually eat “Lexington” style pork which is usually the shoulder smoked low and slow. We keep it simple and don’t overthink it!
